They're not made from a grain so there's no gluten. I don't know how they tested its GI as there are no carbs to measure – maybe they assumed it was low like other viscous fibres.

Ok, first, Konjac noodles are the absolutely best alternative to regular pasta when you are on a Keto diet or just want fewer carbs. They are full of fiber and when cooked properly, almost indistinguishable from real pasta. However, now comes the bad part, so far 1 out of every 2 packs I have opened have had rotten bad noodles. These are a good substitute. We’re on keto and no longer eat any pasta, these do maintain a similar texture and have a very plain taste, so if you’re looking for a noodle substitute these work well.
